10 Days to GO

Remember the last post, when I thought I could add proteins on day 8? Yeah, nope. Luckily, I caught it before diving deep into protein heaven. I also got some serious meal prep done, which has left me a very happy lady, leaving my Sunday open to some light house cleaning and relaxing! Today, I added protein and I had tacos for breakfast, just as I said I would. 

​So, lets talk about what I cooked. The first protein was lean grass fed beef and I transformed it into tomato sauce to top my butternut squash noodles and my jicama tacos! 2 dishes, which ends up being 4 meals! What?! Then I baked organic chicken breast with whole poblano peppers. I used some of the chicken for my quinoa 'bowls' (pic above) and blended the poblano pepper into a sauce which adds some spice and flavor! I'll prob make more tacos out of the leftover chicken. These tacos are ridic! And good for you! 
Jicama Tacos:
Pick a protein and add cumin and chili powder
Toss broccoli slaw in fresh lime juice, salt/pepper
Keep the jicama wrap cold or warm it up for 20 seconds in a hot pan.

  • Motivation? CHECK. Besides the day I woke with the muscles soreness that was horrendous, I'm feeling great. These bursts of energy are really something. I used to have to really talk myself into tasks, projects, and 'to-do's', with giving myself a reward after the task was done. The reward was always food and booze. Always. I will say that once Saturday hit, I was wanting to do absolutely nothing. I was tired from a long week of work and sore from an event the night before, but these energy bursts kept me moving all day, but at nice pace. The important thing I keep telling myself and others is REST. I have always needed to recharge. I went and indulged in a pedicure and took a long bath with all the essential ingredients a goddess needs: Epsom salts, aromatherapy, candles, and Louis Armstrong on pandora.
  • My sleeping has also been great. I have been unable to sleep in because of my new found motivation, but I'm getting 8 hours of sleep, so I need to get up!
  • Weight loss? I am def feeling lighter. I also was able to fit into a pair of jeans that I was unable to wear for at least 6 months. There's obvi inches dropping off and the inflammation in my face alone has a noticeable difference. I am not going to weight myself or measure until the end. Stay tuned. 
More toys arrived and I can not wait til tomorrow's am shake prep! Having multiple sizes and to go cups is going to cut that time in half! YES! Being organized, prepared, and not rushed is how I am succeeding. I am finding my new routines and my new likes and dislikes. By changing my routines I am hoping for new habits and hobbies that will create a much healthier relationship with food. This week I hope add more movement aka exercise. Keep you posted! Thank you to all my fam and friends that have 'high-fived' me and sent words of comfort and support. It's not easy changing habits and routines, esp when I'm a Taurus. It means a lot to me.
